Eater Dallas just published their roundup of new State Fair of Texas fried foods, and we were honored to see our Deep-Fried Sweet Tea sitting right at the top of the list.

Developing a new fried food is a lot of work and involves both art and science. Not only do we have to come up with something that tastes great, but we have to figure out how to produce it at scale to satisfy thousands of hungry fairgoers. Inspired by this year’s Fair theme, Deep in the Heart of Texas, Stephanie developed the Deep-Fried Sweet Tea concept in our home kitchen. After lots of trial and error, conversations with trusted friends/advisors, and many tastings, we finally landed on a recipe that we liked. Then, our head honcho Steve took our recipe to our commercial kitchen, where he built a process to mass-produce our new creation.

You can find Deep-Fried Sweet Tea at all three Velasquez Catering & Concessions locations at the 2014 State Fair of Texas:

  • In the Grand Place building
  • On MLK Blvd, between the Ferris wheel and the fountain
  • On the Funway, next to the Log Flume Ride

3 Reasons We’re Excited for the 2014 State Fair of Texas

The 2014 State Fair of Texas is upon us and we couldn’t be more excited. This time of year is always extremely busy–it’s the month of nonstop work that comes before the month of nonstop work. But, it’s also a time where we get to get creative and find ways to improve our menu and provide better experiences for our customers. So, without further ado, here are the top three thing we’re most excited about this year.

1. New Menu Items

This year, we’ll be serving a couple of great new menu items. First up is Deep Fried Sweet Tea. We bake sweet tea into a delicious custard, bread it with graham crackers, then deep fry and serve it with a drizzle of sweet tea syrup. Sweet tea is near and dear to every Texan’s heart and we think you’ll love our fair-style take on this all-time favorite.

Next, we have Waffle Fry Nachos. We were playing around in our kitchen one night and testing different kinds of french fries for another dish when someone had the bright idea to cover waffle fries in classic nacho toppings–ground beef, cheese, sour cream, salsa and jalapenos. It’s delicious, and, in hindsight incredibly obvious!

2. Football in the Grand Place

Our location inside Grand Place has a new feature: flat screen TVs with satellite service from Dish Network. We’ll be playing all the top football games throughout the Fair. Stop by, get a break from the elements (it’s air conditioned!), enjoy a cold beer and catch some of the game. You can enter Grand Place from Cotton Bowl Plaza or on Grand Avenue near Big Tex.

3. The New Wild West Pet Palooza

Last year, we bid farewell to one of our favorite State Fair of Texas Traditions: the bird show in the historical Fair Park Bandshell. But its replacement, the Wild West Pet Palooza, is sure to be spectacular in its own right. This performance is hosted by acclaimed animal trainers and combines comedy with amazing animal tricks to create an unforgettable experience for the whole family.
