The theme of this year’s fair is Deep in the Heart of Texas, so we celebrated by deep frying something near and dear to every Texan’s heart: sweet tea! We bake sweet tea into a custard filling that we bread with graham crackers, deep fry and top with sweet tea syrup. It’s a new take on a southern classic.

We’d tried burgers topped with Mac-N-Cheese before, but like most folks, we think our mom’s mac is the best, and even better fried. So, we took our family’s secret four-cheese recipe, deep fried it, and put it on top of a griddled all-beef patty. These bad boys even got to be on TV—check us out on News Channel 4!

A play on the corn dog. All-beef franks sliced thin, breaded, deep fried, and served with spicy mustard.

 

 

Handmade Stuffed JalapenosHand-Stuffed Fried Jalapenos (Chicken or Cheese)

This recipe dates back to our original restaurant, where it was always a favorite. We hand-stuff and bread fresh jalapeno peppers with seasoned shredded chicken or jack cheese, deep fry them until golden brown, and serve them with ranch dressing.

The main ingredients in a traditional Mexican tamale: beef, masa, and savory sauce; rolled into a ball, deep fried until crispy. We’re really proud of this one—the ultimate fusion of our Mexican and State Fair traditions.

Steve spent time in Mexico City and knows how satisfying a simply-prepared taco can be when you use the best ingredients. We season chicken or beef and serve it on a flour tortilla with cilantro, onions and salsa. Simple and perfect.

 

Frozen Sweet Tea

Frozen Sweet Tea

Sweet tea is a great drink for a hot day, but sometimes the Texas heat demands something even more heavy duty. If you’re overheating at the fair, come try our frozen sweet tea. It’s the sweet tea flavor you love in a refreshing slushee form.

 Waffle Fry Nachos

New for 2014, our waffle fry nachos are a mashup of American and Mexican flavors. We take extra-crispy waffle fries and top them with ground beef, nacho cheese, sour cream, salsa and jalapenos.

Cajun Sausage On A Stick (Crawfish or Alligator)

Steve Velasquez spent a year living in New Orleans, where he developed an appreciation for Cajun food and, perhaps more importantly, made some friends in the restaurant business. Steve’s guy down in Louisiana produces these delicious, spicy sausages, and we’re proud to serve them to our customers in Dallas.
